I consider myself a “guys guy.” But there are two “guy things,” or dad skills I just don’t have.
- I can’t back up a trailer, on a boat, snow mobile, anything. My friends have tried to show me time and time again, but I can’t do it. The whole left is right thing, right is left, fries my brain.
- I can’t make pancakes. Or more than one good pancake.
My father in law is an ace at this. When he is over he pumps out pancake after pancake all perfectly cooked and delicious. I can make one great pancake, then the rest get more and more burnt as I continue to cook.
For years my wife has stepped in and helped me out, with an sympathetic smile, knowing that as many times as she has tried to show me, I can’t get it right. I’m sure in her mind she is thinking, “ My poor husband, he has no pancake skill.”
I have tried to mask the problem with the frozen pancakes that you can cook up in the microwave, pancake breakfasts at every Boy Scout troop in Chicago and plenty of breakfasts out. At some point my kids are going to realize that D.A.D. is a fraud and demand to see me cook the real deal.
Right as I was ready to turn in my “D.A.D. card,” I came across the muffin pancake. A pancake you make in a muffin tin! Are you feeling me, same pancake taste, without all the burning.
The pancake muffin is actually easier to make and keeps everyone in the family happy all at the same time.
Here’s the scoop.
- Make pancake mix- Your call, I am not going to get all crazy with mix eggs with water etc. You got this part.
- Pre-heat the oven to 350 degrees.
- Get a muffin tin and spray in a little non-stick stuff.
- Pour in the pancake mix into the individual muffin slots, about ¾ full
- Drop in your favorite mixings into the muffin slots. We have 4 rows of three in our muffin tin. My son likes M&M pancakes, my daughter likes chocolate chip, my wife blueberry and me, bacon! You can put just about anything you would want, it’s a lot faster and much cleaner.
- Cook the pancake muffins for 15-20 minutes or until they are firm on top of the muffin. You know, not gooey or collapsing.
- Get ready to hear your family make up a song in your honor because you are such an amazing dad.
While I may never be able to make a pancake the old fashioned way, I have saved breakfast in our house, everybody gets what they want and I can keep my D.A.D card for yet another day.

I was with you until you described them as being ready when “hard to the touch.” I’m hoping that’s just an unfortunate word choice and that if I try making these they won’t be little pancake golf balls.

This is great! I too, am pretty much a fail at making pancakes. I’ll try to impress my kids by making these this weekend. 🙂

They are SO good. I cook the bacon about 75% of the way and then break it up, throw it in and pancake magic!
